Vegan Chili Done Right – The Ultimate Step-by-Step Guide

This vegan chili recipe provides a delicious step-by-step guide to making a hearty and healthy vegan chili. With simple ingredients, great taste, and minimal effort, this recipe is perfect for those looking to get creative in the kitchen while sticking to their vegan lifestyle.

Step 1: Gather the Ingredients:

  • 2 tbsp olive oil 2 tbsp
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 jalapeño pepper (seeded and chopped)
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) of kidney beans (rinsed and drained)
  • 1 can (15 oz) of black beans (rinsed and drained)
  • 1 can (15 oz) corn (drained)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper (to taste)

Step 2: Base of your vegan chili

Heat the olive oil in a big pot over medium flame. Once the oil’s hot, drop in the onion and fry for about 2-3 minutes until the onion has softened and become transparent. Stir the onion now and then to stop it from burning, and make sure it cooks all the way through.

Step 3: Add vegetables to your vegan chili

Now, toss in the garlic, bell pepper, and jalapeño pepper. Give everything a good stir, and continue to sauté for a couple more minutes until the vegetables are aromatic and lightly browned.

Finally, add the diced tomatoes, tomato sauce, and all the beans – kidney beans, black beans, and corn – into the pot when the vegetables are just cooked.

Step 4: Add seasonings

Mix in the chili powder, cumin, paprika, oregano, salt, and pepper. Make sure all the spices are spread out evenly. Bring the combination to a light boil and let it simmer for a few minutes, stirring occasionally.

Decrease the heat to low and let it simmer for 20-30 minutes, stirring regularly to prevent the mixture from sticking or burning at the bottom of the pan.

Add a splash of water if your vegan chili is beginning to thicken too much. Taste and season as desired.

Step 5: Enjoy

Serve your vegan chili hot, and enjoy it with your favorite toppings! Avocado slices, freshly chopped cilantro, and vegan sour cream, are popular choices that make a delicious combination.
